Blueberry Cheesecake Bars

I made these bars for our Rotaract get together after our sandbox fill and they were really yummy!  Next time I make them I think I might try a different fruit, maybe fresh strawberries as those are coming into season soon!

Blueberry Cheesecake Bars

Ingredients:
Crust
1 pouch Betty Crocker oatmeal cookie mix
1/2 c. butter, softened
1 egg

3 8 oz. packages cream cheese, softened
3/4 c. sugar
1/2 c. whipping cream
3 eggs
10 oz. blueberry spreadable fruit - I used Smuckers Real Fruit Blueberry Jam
1 1/2 c. fresh or frozen whole blueberries

Heat oven to 350°.  Grease a 9 x 13 pan.  In large bowl, beat cookie mix, butter, and egg on low speed until well blended.  Bake 15 minutes, let cool 10 minutes. 
Meanwhile, in another bowl, beat cream cheese and sugar on medium speed until fluffy.  Add whipping cream and eggs and beat on low speed until well blended.

Spread spreadable fruit on top of partially cooled crust and sprinkle with blueberries.  Pour cream cheese mixture evenly over blueberries, spreading gently to cover.

Bake 40-45 minutes or until center is set.  Cool and refrigerate for at least 2 hours before serving.
