Zucchini Bread

Ahhh it feels good to be baking again!  I knew having a newborn would be exausting but I guess I didn't realize how much and how much your free time is gone!  I finally got back in the kitchen and did some baking with zucchini since it's plentiful this time of year!

Zucchini Bread

3 eggs, beaten
1 c. oil
2 c. sugar
2 c. pureed zucchini (2 small zucchini or 1 large)
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
optional - can add nuts but I choose not to

Mix together the dry ingredients.  Add all liquid ingredients and mix together thoroughly.  Place in 2 greased loaf pans.  Bake for 1 hour at 325.
