Peanut Butter Granola Bars


Adam and I have been trying to eat healthier lately and I found this recipe off another blog for making your own granola bars so I thought I'd try it. They turned out fabulous!!

Peanut Butter Granola Bars
Makes 12 bars

Ingredients:
2 1/2 cups Fiber One cereal
2 cups quick-cooking oats
1/4 cup chopped almonds or peanuts - I used peanuts
2/3 cup packed brown sugar
2/3 cup honey
2/3 cup peanut butter
1/4 tsp salt
1 tsp vanilla extract
1 tsp cinnamon
1/3 cup chocolate chips

Directions:
In a large bowl, mix together the cereal, oats, and nuts. Set aside. Grease a 9x13 pan with cooking spray.
Combine the brown sugar and honey in a small sauce pan over medium heat. Heat until just boiling, then remove from heat and stir in peanut butter, salt, vanilla, and cinnamon until smooth. Pour over the cereal mixture and stir quickly. Immediately press mixture into the pan. Lightly press chocolate chips into the top of the bars. Refrigerate for about an hour to set. Cut into rectangle bars but be sure to keep in an air tight storage container.
